Some people hear winter squash and wonder why on earth I’m talking about it in the fall. The winter in the squash doesn’t refer to it’s growing period, but rather the season it can be eaten through with proper storage.
I’m a big winter squash fan, and not just because they look so cool. Most winter squashes are vine-type plants with fruits harvested when fully mature. Winter squash take longer to mature than summer squash {3+ months} and are best harvested once the cooler fall weather sets in. They can be stored for months in a cool dry place like a basement—hence the “winter” in their name.
Here are some of my very favorite winter squash recipes, broken down by type. Enjoy!
Acorn Squash

Bought some butternut squash spiral noodles to try them. Squash in Fall is my favorite and I wanted to cook them with a different recipe. Have you tried spiral veggies?
