Dear Handsome Husband,
I know you are busy at work right now, but you should seriously consider coming home for lunch.
I just made the most amazing baked tomato dish with the rest of those reclaimed tomatoes I salvaged earlier this week.
Ingredients
1 cup whole wheat bread crumbs
3 large beefsteak tomatoes
2 tablespoons fresh basil, chopped
2 teaspoons Italian seasoning
1 tablespoons unsalted butter
1 cup pine nuts, toasted
Directions
Preheat oven to 425°F.
Butter a 9-inch casserole dish
Toast the pine nuts and set aside. Combine the bread crumbs with 1 tablespoon melted butter and 1 teaspoon Italian seasoning and toast until lightly browned. Slice tomatoes about a 1/2 inch thick and arrange, overlapping, in baking dish. Sprinkle remaining 1 teaspoon of Italian seasoning, basil, pine nuts and bread crumbs over the top of the tomatoes and bake uncovered for 15 minutes.
Serve warm. Preferably with a big bowl of pasta.

Funny – or weird – story.
I had a dream about you last night, Miss Mavis – LOL!
We drove up to WA for some festival….the tulip one maybe….and there were all these vendor booths there and you were sitting there under a tree cutting up apples and giving people free apple slices. So I went up with my fam to get some and asked how much and you said they were free because you have so much fruits/veggies that grow in your garden. And then I realized that it was you – Miss Mavis! So I whispered that to my husband and he told me to tell you that I was me….so I whispered to you “I’m LaToya” – LMAO!! — and you gave me a big ol’ hug…and extra apples – heh.

Oh wow. My mouth started watering looking at this. I have always wanted to try pine nuts and I have a bar-b-cue coming this weekend (we are moving into a 1916 Craftsman house and have to feed our friends who are kind enough to help us move…) My best friend, who will be there is allergic to potatoes and of course I got a huge FREE container of potato salad. So I will be trying this one out for her. She will love it.. Thanks again Mavis…. You ROCK!
