Is it just me, or do you also plant vegetables that you don’t know what the heck to do with once it’s time to harvest them? Every year I plant cabbage, and every year I’m left scratching my head wondering what on earth to do with it. The Handsome Husband is the big cabbage fan in this house so I grow it for him. Not for me.
Well, a few days ago I asked on Facebook “It looks like I will be harvesting cabbage tomorrow… Does anyone have any good ideas on what I can make with it?” And as soon as I saw the words Cole Slaw, I immediately thought about Kentucky Fried Chicken. When I was a kid, my Dad would always want to go there and get a bucket of chicken and all the fixin’s. The cole slaw was always my favorite part of the meal, so when I came across this copy cat recipe for KFC cole slaw, I knew I had to try it.
And it’ good. Oh so good. Just like the real thing. Except it doesn’t come in a Styrofoam container.
Ingredients {slightly adapted from this recipe}
8 cups finely diced cabbage
1/4 cup diced carrots
3 tablespoons onions, minced {I like onions!}
Dressing
1/3 cup granulated sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk {I used 2%}
1/2 cup mayonnaise {I had to borrow this from Mrs. Hillbilly}
1/4 cup buttermilk {How to Make Buttermilk}
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice
Directions
Wisk together the dressing and set aside. Finely chop the cabbage, carrots and onion and mix together in a large bowl. Pour the dressing over the vegetables and combine. Cover and refrigerate overnight.
