Yesterday, Sarah left me this message on facebook –
“Mavis, try this recipe: shred raw beets, raw carrots, chop a few nuts (cashews or almonds work well), add a handful of raisins (or currents), and squeeze a fresh orange over it all. It is AMAZING (and really good for you, and doesn’t taste all beety, IMO), and pretty.”
Have you ever tried a raw beet salad before? Well I hadn’t, so I thought I’d give it a whirl. The recipe itself was super easy to make. And so was stuffing it in my big mouth. Yum. Yum. Yum.
So this is what eating real food tastes like.
I like it.
Ingredients
1 cup shredded beets
1 cup shredded carrots
1/4 cup sunflower seeds
1/4 cup raisins
the juice of 1 medium orange
Directions
Toss the beets, carrots, sunflower seeds and raisins together in a bowl and pour orange juice over the top. Divide salad between two plates and serve.
