Once you have tried this recipe for blueberry muffins, you will never try another blueberry muffin recipe again. I ate 2 of these muffins as I was typing this up. Seriously, they are that good.
Ingredients
1 1/2 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 1/3 cup blueberries {I used frozen}
1/4 teaspoon cinnamon
Crumb Topping
1/3 cup sugar
1/4 cup all-purpose flour
2 tablespoons butter, cut into bits
1 teaspoons ground cinnamon
Preheat oven to 400 degrees
Line crusty old muffin tins with muffin/cupcake liners.
In a large bowl mix together 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Add oil, egg, milk and stir until there are no lumps. Fold in blueberries. Set aside.
In a separate bowl mix together the ingredients for the crumb topping with your fingers {or a fork if you don’t like to touch your food} until nice a crumbly. Is crumbly even a word? Hmm.
If you have major OCD like me, use a 3 tablespoon cookie scoop to fill your muffin tins, if you don’t, just fill the tins 2/3rd of the way full and sprinkle with crumb topping mixture.
Bake the best blueberry muffins on the freakin’ planet for 18 -20 minutes until they are lightly browned.
Cool slightly and serve warm.
After everyone has had a blueberry muffin, {or two} swipe the rest and hide them for later. Yummmm!

you timing is perfect! i have discovered a new park in my area, well not “new”, but new to me. over here in tacoma i found blueberry park! oh my! its twenty acres of blueberry bushes, maintained by volunteers and its free to come pick blueberries from may to september. i have been once so far, brought home my treasures and made/canned blueberry sauce. planning on going again with my two young’ns, then we can come home and make muffins. yum! thanks for the idea.

It is on D st. just off of 72nd. the easiest to explain directions, would head north…or south on I 5 and get off on the 72nd st exit. you will want to head east on 72nd st. You are going to go until you cross Pacific Ave/ highway 7. Once you pass Pac ave keep going down about 4 streets or so…. it’ll be D st and there is a sign.turn right. it looks like you a turning into a neighborhood ( which you are) and the park is on the right.

if you live in the tacoma area and close by, the season is still going. 🙂 i was out there last week and there was still a ton of green berries. I think the website says the season is from may to sept.

I just made them and the husband is delighted! My only question is what is “cup butter”? I only had margarine and used that for the crumb topping and it wasn’t very “crumby” — it had to be placed on top, not sprinkled.
Please explain so I can do it right next time? Thanks!

Oh you are sooooo mean. Blueberries are a real luxury here in summer. They sell for about $5(NZ) a cupful. Forzen are about $12kg sigh. But occasionally I buy a tin of canned blueberries for a real treat.
I always put a good sprinkling or (spelling?) demerara or coffee sugar crystals on top of mine. Quick easy topping. And…. for a yummy orgasmic surprise, put a teaspoon of cream cheese in the middle of the mix. doubles the yum.
