This is hands down our favorite way to use up Thanksgiving leftovers. You can pretty much add any leftover vegetables to this, but here are the ingredients we used this time around. I hope you like it. We sure do.
Ingredients
3 cups cooked turkey meat, chopped
2 cups leftover corn kernels
1 cup leftover green beans
1 cup leftover cooked carrots
1/2 of a yellow onion, diced
2 medium potatoes, cooked and cut into chunks
3 cup seasoned gravy
2 teaspoons dried thyme
salt and pepper to taste
1 egg {for egg wash}
1 double pie crust
Directions
Basically all you do is place a bunch of extra vegetables, spices, leftover turkey and some gravy into a bowl and mix it up. Line a 9″ pie plate with an uncooked crust, pour the ingredients in, and add another crust on top. Seal pie, crimp the edges, and brush with an egg wash. Pop the pot pie into a 375 degree oven on a lined baking sheet. Bake for 30 – 45 minutes or until the gravy is nice and bubbly and the crust is golden brown. Yee- Haw, Leftovers rule!

Love making pot pie with Thanksgiving leftovers! Only difference between yours and mine is I make a white sauce and don’t use thyme. Delish either way.
