I was over at Mrs. Hillbilly’s House the other day and she was telling me about a new recipe she had tried from our favorite cookbook Fix-It and Forget-It Big Cookbook: 1400 Best Slow Cooker Recipes. If you don’t have this cookbook you are seriously missing out BIG TIME.
In a nutshell, it’s da’bomb!
I adapted the recipe a wee bit and used what I had on hand and this turned out so good, I actually made myself sick. I ate 3 bowls full of this soup and yes, I was moaning like a fat gnome who had overdosed on mushrooms for a good hour or so. But man, it was totally worth it.
Ingredients
2 {15 oz} cans black beans, drained and rinsed
2 {14 oz} can tomatoes, undrained
1 {14 oz} corn, drained
1/2 cup water
2 tablespoons fresh chives {onions would be fine}
2 tablespoons chili powder
1 teaspoon cumin powder
1 clove garlic, minced
Directions
Toss everything in the crock pot and cook on low for 8 hours or high for 4 hours. Add salt and pepper to taste before serving.

I think you missed a spice. I see something else but cannot make it out. Do you think it would work with dry beans?

We call this taco soup and put shredded cheese and sour cream on top . We had it last night and I had two bowls myself!

We do the sme thing, plus a few teaspoons of dry ranch dressing. We call it Sante Fe soup and it gets lots of raves!

I would love some idea’s for caning this soup, I can allot of soups for my husband to take to work. It would be better with dry beans when canned so they don’t turn to mush but not sure there is enough juice to do it that way.

This is so yummy! I love black beans and have been craving soup like crazy lately. I didn’t drain the beans and added grilled chicken and a cup of mixed frozen veggies. This soup hit the spot.

This recipe is missing the most obvious ingredients: Salt and pepper!
Two tablespoons of chili powder made this too spicy for me. Though I don’t like spicy foods. I think someone who does like spicy foods would LOVE it (with salt and pepper of course). Goes well with toritillas.
