My friend Jane wrote a cookbook last fall Thy Hand Hath Provided Recipes and Preserving and her cookbook has just been released on Amazon as an eBook. Wahooo way to go Jane! In case you don’t already know, a few months before I started my own blog in January of 2009, I discovered 2 blogs and fell in love with them: Thy Hand Hath Provided and Mama’s Minutia.
In the fall of 2011, I hopped on an airplane to flew to a pie party in Virginia to meet the people behind the computer screens. It was awesome!
Tonight I’m happy to announce Jane is offering 2 of her Thy Hand Hath Provided eBooks AND 2 of her spiral bound books for a giveaway. I have the spiral bound version of her cookbook and use it about once a week. Seriously, it’s that good! If you like real food and cooking from scratch, you’ll love this book.

Anyhoot, back to the topic at hand. I would love love LOVE either of these, but would especially love the spiral bound version!
As for my favorite meal? That’s tough. I really, really love cooking and creating and food in general, so I have a lot of favorites, but my never fail go-to is Mexican food. If I’m out and about, it’s a burrito bowl at Chipotle or a dinner platter with an enchilada, taco, and taquito at a local family-owned Mexican restaurant. At home, I tend to do more taco salads. In the summer, I also love to grill steak or chicken and have it with homemade potato salad and Italian salad (any fresh raw veggies, sliced black and green olives, sometimes pepperoni, and 1/2 italian, 1/2 creamy italian dressing, salt and peppers to taste, all tossed together). Nom nom nom.

My favorite homemade meal is egg rolls! Years ago, I got a recipe that uses 1/4 pound ground beef with lots of shredded cabbage, sprouts, carrots! It was the recipe that introduced me to Chinese 5 spice! Since we have 11 children, being able to make a batch of about 60 egg rolls with 1/4 lb of meat is an economical as well as tasty meal! I also make our own sweet and sour sauce! Would love to win the e-book (less chance of spilling on the pages!)!

I’d have to say my favorite is salmon. I take a thick filet (crosscut, skin-on), lightly dust it with cornmeal, and saute it with a little olive oil until it’s golden brown and delicious. Then, I put a stripe of barbecue sauce down the center, and serve it with a salad. Sounds weird, I know, but it’s seriously amazing! Crunchy on the outside, perfectly cooked on the inside! I’d love the spiral book…electronic devices don’t last long in my kitchen…I’m a messy cook. 🙂

Breakfast has always been my favorite meal…and right now my favorite breakfast is french toast! My favorite home cooked meal is pizza! We make it almost every weekend – I make the dough during the day, sauce in the freezer from my tomato harvest – and whatever else we feel like piling on. My sweet man flips and spins out the dough, the kids top it with their own creations. It’s my go-to plan when we have company – they enjoy giving the spinning a try.

My favorite home-cooked meal is probably ice cream. Which sounds odd, but my family has a tradition of having homemade ice cream for dinner once every year. It was always the most magical day for me growing up.
Concerning real food I really like making fried potatoes, eggs, and ham for breakfast. It’s simple and really filling, albeit a little fattening.

I enjoy, and prefer, making meals for my family from scratch. So as I have been through this process for as long as my kiddos are growing up, and have learned and tried many recipes, I still love making homemade macaroni and cheese. I can use any cheese in the fridge (sometimes cheddar, sometimes even mexican!) and even try dashes of dijon or whatever may shake the taste up a bit. 🙂

We usually serve with potatoes (either mashed or roasted) and wilted leafy greens – doesn’t get more romantic than that!!!! Best part is the leftovers that never get wasted 🙂
