I spent practically all day yesterday out in the garden and it was awesome. Apparently I haven’t been checking the zucchini plants lately because when I looked in the garden beds I found 2 whoppers in there. No worries though, I’ll use what I can this week and then freeze the rest for later.
Yesterday I made the best ever breakfast muffins. I ate 3! The Girl and I absolutely LOVE them and I usually make a double batch but I didn’t have any extra room in the freezer this time around so I’m pretty sure these will all be gone by tomorrow.
Have you ever tried making mashed potatoes in the crock pot? Well if you haven’t, you totally need to this for Thanksgiving {or really any other day of the week}. I made a big batch on Saturday to go with our chicken and everyone raved about them.
I also tried a new crock pot recipe this week. Everyone liked it so I’ll work on getting the recipe posted soon.
Winco $56.82
Ahh Winco. I’ve missed you. I need to shop there more often because I feel like my money stretches there than any other store these days especially since I’ve pretty much fallen off the coupon wagon. Sometimes I’ll find an Ibotta deal but I really don’t stress about the prices because they are so much lower than other stores in the area.
If you are a Winco shopper, have you tried their tuna? This time around it was $0.69 a can and usually when you open the tin there is one big chunk of tuna in there which I happen to think is waaaaay better than how other brands have tuna bits swimming in water in their tins. If you haven’t tried their tuna yet, add it to your grocery list. I think I’ll make a tuna casserole this week.

I like to toss a bit of seasoning on them and then cook the chicken in the crock pot to use throughout the week.
Mrs. HB needed some chicken so I bartered a little with her for a few items I needed for some upcoming recipes. I gave away my spring form pan because I only use it like once a year so I had to borrow Mrs. HB’s for an almond cake recipe I plan on making. Doesn’t that make you crazy? The moment you get rid of something you suddenly need it?
I also made a lighter version of General Tso’s chicken {minus the vegetables} one night for dinner along with a few pot stickers that were in the freezer.
And then there was the corn the HH surprised me with at 7 am. Usually Farmer Ted gives my husband a case or two of corn in late August every year but for some reason we didn’t get one this year. But hey, corn in October? I’ll take it!
And last but not least…. my linner from the other day. I think I look forward to my big salads more than anything else. The toppings always change, but they’re always like a meal and a half. And pickled beets!!! They’re pretty much the best thing ever. 😉

I see a walrus! As for food I’m making here, I meal prepped yesterday for this week- overnight oats with blueberries and coconut flakes for breakfast, a big pot of Thai butternut squash soup (amazing!), roasted chicken and roasted vegetables…it’s going to be a delicious easy food week here. I didn’t make the soup in my crockpot but I probably could- maybe next time.

I’m curious–did you get rid of all your chest freezers? Do you operate with just your little kitchen freezer? I know you make lots of freezer meals, receive bulk zaycon orders, and put up your bounty from the garden. Just wondering how you do it all.

Yes. We are just down to the kitchen freezer now. The freezer is PACKED right now. I should probably do a couple of no spend weeks to work on the stuff that is in there.

We just recently bought a few cans of the WinCo tuna and my tuna snob (fisherman) husband who never stops complaining about store bought tuna actually requested I buy their brand tuna from now on!

Last week I made apple/pear sauce in the slow cooker. Today I have butternut squash in the slow cooker and will add some of the apple/pear and make Butternut Squash and Apple Soup (and leave the pear to be my “secret ” ingredient.) I’ll add a salad and dinner will be yummy!

Hi Mavis,
I made your pot roast recipe with the jalapenos in it on Saturday. Delicious! red potatoes, carrots, garlic and celery roasted in the oven completed the dinner. All who ate, said they wanted it again. Freddy’s had the chuck roasts on sale this week (until the 9th) so I got the biggest one they had.

I made stew in the crockpot on Tuesday and Turkey noodle soup Sunday (yesterday). love my crockpot for winter cooking. going to try Winco tuna. always looking for a deal.

We do not have a Winco around here (Michigan) but I do love Costco’s tuna. It averages out to a dollar something a can but there is a big chunk of tuna not tiny shreds floating in water.
