It has simple in the title but there is nothing simple about the taste of this granola. It’s so nutty and oatty and crunchy with just the perfect amount of sweetness. It’s like granola perfection. This is of course based solely on the opinion of my family, since all I can do is sniff it. But it gets a perfect score based off of the sniff test. Also, apparently, the taste test for those not living on dehydrated packets for nourishment.
You should make a batch {or 3}. It’ll go quickly. Especially if your family gobbles it up like mine does. According to the HH, this is PERFECT over yogurt. I’ll just have to trust him on that!
3 cups old fashioned rolled oats
3 tablespoons brown sugar, packed
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/3 cup honey
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/4 cup raisins
1/4 cup Crasins
1/2 cup chopped almonds
Preheat oven to 300 F.
In a large mixing bowl, place the oats, brown sugar, cinnamon, and salt, and stir to combine. In a separate bowl, mix the honey, oil, and vanilla. Pour honey mix over the oat mix and stir until coated.
Press into a thin layer on a rimmed baking sheet. Bake for 15 minutes, stir and then bake until the granola is very light golden brown, checking every 5 minutes {not more than 15 additional minutes}. Be careful as the granola can burn quickly.
Cool to room temperature before mixing in fruit and nuts. Store in an airtight container for up to 2 weeks. Enjoy!
