You know what happens when you realize you can take all the delicious flavors of an Almond Joy and make all sorts of recipes that mimic it? Your life changes, that’s what. So now I’m on an Almond Joy recipe trying kick. And this granola recipe did not disappoint. It’s chocolately and coconutty and almondy and well, yumm-y.
Coconut oil
5 cups old-fashioned rolled oats
2 cups chopped or slivered almonds
1/2 cup unsweetened cocoa powder
1/2 cup brown sugar {DIY brown sugar recipe}
1 cup pure maple syrup {you can sub honey here}
4 teaspoons vanilla extract
2 cups unsweetened coconut flakes
Instructions
Preheat the oven to 325 F. Grease a baking pan thoroughly with coconut oil and set aside {or you can line with a Silpat}
In a large bowl, mix oats, almonds, cocoa powder, and brown sugar until combined. Pour in syrup and vanilla, and carefully toss until evenly coated. Spread over prepared pan and bake for 45 minutes, removing the granola from the oven every 5 minutes, flipping it with a spatula, and patting it back down before returning to oven. After baking for 40 minutes {and flipping every 5}, remove from oven and sprinkle the coconut flakes over the top of the granola and then flip it for a final time. Bake for 5 more minutes, remove from oven and cool completely before serving. Try your best to share with others, although it will be a challenge.
