I’d seen bacon wrapped corn recipes through the years and in magazines and I was always intrigued, but I’d never tried it myself. I always thought it would be the perfect recipe for a summer BBQ. Turns out, it’s the perfect recipe for every meal. Man-o-man was this a hit. Sometimes corn on the cob is messy and a pain because it gets stuck in your teeth, but the added flavor of the bacon makes all that flossing worth it!
YUM!
Bacon Wrapped Corn on the Cob
Ingredients
- 4 ears of fresh corn
- 8 slices bacon
- Salt and pepper to taste
Instructions
-
Preheat grill or crank your oven up to 400 degrees. Peel back corn husks, remove silk strings and rinse corn under cold water. Salt and pepper each ear and then wrap 2 pieces of bacon around each ear of corn. Grill the corn over medium-high heat {or 400 degrees in the oven} for about 20-30 minutes, turning once, or until bacon is crispy.

I wonder if I could do this in the microwave. I’ll have to try, when the corn comes in this year.

Hi Mavis,
I made a slight modification to this recipe. I made up a rub consisting of 1/2 tablespoon salt, 1/2 tablespoon brown sugar, 1/2 tablespoon paprika, 1/2 tablespoon chili powder. I put the rub on the inside of the bacon, wrapped the cobs and sprinkled the extra on the outside of the bacon. Eye rolling goodness!
