Pumpkin season is officially here! I’m betting a few of you are inundated with them right now. Well this recipe is a must bake! If ever there was a recipe that could be crowned the champion of all pumpkin recipes, this would be it. It’s freakin fantastic. Like melt in your mouth, call all your neighbors over for brunch good. I’ve made it twice now, and it was so hard to wait all night the second time, knowing what was awaiting us in the morning!
Ingredients
6 cups cubed french bread
7 large eggs
2 cups 2% milk
1 teaspoon vanilla extract
1 1/2 teaspoons pumpkin pie spice {DIY Pumpkin Pie Spice Recipe}
1/2 cup pumpkin puree {Pumpkin Puree Recipe}
4 tablespoons brown sugar to sprinkle on top
Directions
Generously butter a 9×13 baking dish. Cut bread into 2″ cubes and toss into the buttered dish. In a small bowl, whisk together the eggs, milk, pumpkin puree, pumpkin pie spice and vanilla. Pour egg mixture over bread. Cover with plastic wrap and place in the refrigerator overnight.
The next morning, preheat the oven to 350F. Sprinkle brown sugar over french toast mixture and bake for 45 minutes, or until golden brown.
Serve with maple syrup and powered sugar.
