My friend Amberlina shared her husband’s pulled pork recipe, and I’ll never make it any other way. Ohmygosh, it was mouthwatering. It takes a little patience, but all that waiting is worth it. We took that most scrumptious pork and then made some yummy Cubano paninis. And now, since I’m in a full-on food coma, I’ll leave you with the recipe so you too can devour it!
Ingredients
7-8ish lb pork shoulder roast
5 tablespoons crushed or minced garlic {not dried}
1 cup of orange juice
1/4 cup lemon juice
1/4 cup lime juice
1 tablespoon coarse ground peppercorn
1 cup minced onion
Olive oil
Sweet rub {we use this kind, but it’s really easy to make your own using any number of online recipes}
1/4 cup Dale’s seasoning {you can skip this ingredient if you don’t have it on hand. It’s just a nice flavor boost!}
Directions
Make a mash by mixing the garlic, OJ, lemon and lime juice, peppercorn and minced onion. Drizzle with enough olive oil to make a paste, then refrigerate mash overnight.
Spread enough “sweet rub” all over to thoroughly coat your roast! Place in roasting pan, cover with foil and put in fridge at least overnight {24 hours is best}.
Set oven to 450F when ready to cook. Place uncovered roast in oven. Cook for 30 minutes. Reduce heat to 225, pull roast out and cover with drained mash {the mash will pool a bit overnight and needs to be more of a paste, so drain any excess liquids off before rubbing it on}, and drizzle with Dale’s {which is the best stuff on earth}. Cook for 12ish hours or until internal temperature reaches 195 degrees. Remove from oven, cover with foil and let rest for 30 minutes. Then remove foil and using two forks, pull meat apart in pan to mix with juices.
We used that pork to make the most tasty Cubano paninis. You can adjust your ingredients to your liking, but we used:
Bread of your choice
Pulled pork
Sliced ham
Sliced Swiss cheese
Thin sliced dill pickles
Spicy mustard
Spread mustard on bread and layer ingredients; press in a buttered panini maker, and cook until cheese is melted. Enjoy!

Love that Dale’s Sauce. We brought 10 bottles with us when we moved here from the South. Luck for us the commissary has it! How do you think this recipe would work if cooked in a Crock Pot?

I bet a crock pot would work okay, but it would change the flavor since, even on low, it would cook it much faster. I bet it would still be good, though! And yes, that Dale’s is the stuff of dreams. Yum!
