Go make these bars right now. I mean, don’t make these bars. I mean do, but be warned you will eat so many it’ll hurt. I seriously had to have the HH hide them. I’m not kidding. I shouldn’t be surprised that these blueberry crumb bars are so amazing. Deb has the BEST dessert recipes!
When I saw the recipe, I knew I wanted to make them immediately, but I didn’t have all the ingredients on hand. So I made a few changes, and they turned out so good!!
Ingredients
1 cup white sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup cold unsalted butter {2 sticks}
1 egg
1/4 teaspoon salt
3 tablespoons lemon juice
4 cups frozen blueberries
1/2 cup white sugar
4 teaspoons tapioca pearls
Directions
Preheat the oven to 375 F. Grease a 9×13 baking dish and set aside.
Combine 1 cup sugar, 3 cups flour, salt and baking powder in a medium mixing bowl. Use a fork or pastry cutter to blend in the butter and egg until dough is crumbly. Press half of the dough into the prepared pan.
In a separate bowl, combine the sugar, tapioca pearls and lemon juice. Carefully fold in the blueberries. Sprinkle the blueberry mixture evenly over crust. Crumble the remaining dough on top.
Bake for 50 minutes, or until top is golden brown. Let cool completely before cutting. Enjoy!
