The Girl and I made this smoothie the other day. She LOVED it! It has kale in it so I tried to love it {honestly, I really did give it the old college try}, but I just couldn’t. So what’s the moral of the story? If you don’t hate kale, this smoothie recipe is going to rock your socks off. But if you are a kale hater like me {anyone? anyone?}, you can always leave the kale out and I’m sure it would be awesome!
Ingredients
3/4 cup frozen blueberries
1 cup baby kale
1 tablespoon peanut butter
3/4 cup milk {I used 2%}
1/2 ripe banana
1/2 cup ice cubes
1 tablespoon sweetener, optional {I used agave, but you can use honey, sugar or whatever your little heart desires}
Directions
Throw all ingredients into a blender {I use my Blendtec} and blend until smooth. Enjoy!

Mavis, I make smoothies all summer with kale. I have to eat it for my eyes. First don’t think
about that you are eating kale and second use less then a cup, think healthy.

Okay, I love that you hate kale. Because it gives me permission to hate it. I’ve tried to prepare it every which way and every which way – I still hate it. It’s bitter and chewy and gives me the lemon face. I’ll stick with all my other favorite leafy greens and spinach for my smoothies! 🙂

What you might try is freezing the banana and don’t add ice. That waters it down and for some reason does bring out the Kale taste more (to me anyway). Also my husband isn’t a huge fan of kale even though we have a healthy smoothy every morning with it, so he adds some pineapple or mango (frozen or canned about 1/3 cup) and that removes that taste for him. Then you don’t need to add any sugar/sweetener to keep it a little lower calorie and adds in another fruit.

Every morning i have a smoothie with kale, spinach, frozen strawberries, frozen blueberries (costco has best prices for these frozen fruits), an orange, almond milk, ground flax seed, chia seeds and soy protien powder. I like the idea of peanut butter for a different twist on a bit of protien.

Use spinach instead of kale. It will blend up better, taste good, and still be healthy. I don’t really like kale much either. Although I do have a recipe for a sweet potato and kale soup that I love.
