I love sweet broccoli salads. I also love bacon. Combining the two was a wise decision on my part. It’s the perfect blend of sweet and savory; healthy and splurge. And then the cashews are added and it pretty much takes this simple broccoli salad over the top. If you need a quick lunch, make this. If you need a side item to bring to a potluck, make this. If you want an easy side dish to whip up with dinner, make this. Get the hint? You should make this.
Ingredients
2 pounds broccoli florets, chopped
1 pound bacon, cooked and crumbled
1 cup mayonnaise
2 teaspoons apple cider vinegar
1/2 cup granulated sugar
1 cup roasted cashews
1/4 cup red onion, diced
1/4 cup Crasins {optional}
Directions
Chop the broccoli into bite-sized pieces and set aside. In a large mixing bowl, whisk mayonnaise, vinegar, and sugar until fully incorporated. Stir in the broccoli, bacon, cashews and Crasins if you are using them. Toss until well coated. Chill before serving. Enjoy!

Just asking: like really (?) one pound of bacon and two pounds of broccoli??? Sound like a lot of bacon. Don’t get ne wrong. I love bacon, but that much?

Yep. It’s delicious! I suppose you could always cut back on the bacon if you want.

And a lot of the bacon will cook off because it’s fat. I’d wager half of that 1 pound will actually be meat.
