If you are looking for a great side salad or dinner salad for that matter {if you are vegetable freaks like we are} then this broccoli cranberry and almond salad with feta should do the trick. Not only is pretty to look at, this salad tastes great too!
Ingredients
1 pound broccoli florets, chopped
2 stalks celery, sliced thin
1/2 cup feta cheese crumbles {mozzarella works good too}
1/2 cup dried cranberries {Traverse Bay are my favorite}
1/4 cup almonds, chopped
For the Dressing
1 cup mayonnaise
1/4 cup sugar
1/3 cup red wine vinegar
1 teaspoon kosher salt
Directions
Chop the broccoli into bite sized pieces and toss in a bowl with sliced celery, dried cranberries and almonds.
In a small bowl whisk together the mayonnaise, red wine vinegar, sugar and salt until smooth. Pour over broccoli salad mixture and stir until everything is evenly coated. Refrigerate until ready to serve.

Try some greek yoghurt instead of the mayonnaise, I love the tang you get from the yoghurt

Is your thing with mayo taste or some other reason? Our family really likes Hain Safflower oil. It’s a wee bit pricey but has a nice flavor. I’ve also tried making my own but I had trouble getting the emulsion right.
Here are some ideas for mayo subs: http://caloriecount.about.com/forums/foods/substitute-mayo We have a friend who is egg and dairy free so in her case, I would try this recipe with grapeseed or olive oil. Otherwise, the half yogurt and half cottage cheese sub someone mentioned in the link I posted would probably give the creaminess that mayo would. Or sour cream.

DH and I were just talking the other night about how good broccoli and almonds go together in a salad. I’m going to whip up something similar tonight. We are mostly dairy free and don’t add in sugar so I’ll have to moderate but the bones if this recipe sound delicious!

“Veganaise” is a great non-dairy alternative for mayo. We actually prefer it over mayo. I buy it in the refrigerated healthy food section at Fred Meyer.

I just made this and it is delicious! Thinking of all the fun ways to modify this recipe and there are sooo many options — instead of craisins & almonds & feta — raisins & walnuts & gorgonzola would be a nice touch. So many fun combinations! Guess you could make an entire post on “mix ins.” I would love to see one! 🙂
