When a recipe is simple to make and involves bacon, it’s pretty much automatic I’m going to love and my whole family is going to agree. The fact I like butternut squash is just a bonus here. But really, if you’re looking for a quick savor side, this one will be a hit! You could even throw it on some buttered pasta and make a meal out of it. Main dish or side dish, I’m in either way!
Ingredients
6 slices of bacon, chopped
3 tablespoons of reserved drippings
3 cloves garlic, minced
3-4 cups butternut squash, peeled and cubed
Salt and pepper to taste
Directions
In a large skillet, cook bacon to desired doneness. Remove to paper towel to cool before coarsely chopping. Reserve about 3 tablespoons of bacon grease in the pan and discard the rest.
While bacon is cooking, peel squash with a vegetable peeler and then cut in half lengthwise. Using a spoon, scoop out and discard seeds. Cut into 1 inch cubes.
Cover and saute squash and garlic in reserved drippings for 8 to 10 minutes over medium heat, stirring occasionally, until squash is tender.
Stir in bacon and cook for an additional minute. Salt and pepper to taste. Enjoy!

Sounds amazing. I’m going to make this tomorrow. I happen to have both of these. What has helped me lose 15 pounds is eating more protein for meals. I eat scrambled eggs every morning for breakfast. I try to not eat much carbs. Also 25 push ups and 50 sit-ups each time I go to the bathroom to gain more muscle. You can do it ❤️❤️
