Cherries are early this year! Albertson’s has cherries this week for $1.99 lb!! Big, beautiful sweet cherries. My local Albertson’s has cherries from Orchard View Farms- The Dalles, Oregon. I bought 10 pounds.ย I made these for the first time last year- they were a BIG hit with everyone.
Ingredients
1 lemon
2 1/2 cups water 2
2 cups sugar
7 cups pitted cherries
4 tablespoons Amaretto Liqueur
Directions
Get jars, lids, and canner ready to go. Prepare the syrup. Zest the lemon, then measure 2 tablespoons of lemon juice from the lemon. Combine zest, lemon juice, water and sugar in a saucepan over medium high heat. Bring the mixture to a boil to dissolve sugar. Boil 1 minute
Pack the cherries into hot, sterilized jars and add 1 tablespoon of the Amaretto Liqueur to each jar. Ladle hot syrup into jars. Remove bubbles, leave 1/2 ” headspace. Wipe edge and put on lid and ring
Process in a water bath canner for 15 minutes. Enjoy!

Need a canner? I used the Granite Ware 11-1/2 Quart Covered Preserving Canner with Rack. And if you need a tool kit, I use one similar to this one.

What would amaretto cherries used for? Silly question but i would love to try them and just drink the juice ๐
Susan says
We eat them right out of the jar in the middle of winter when cherries are not an affordable item.
You could also put one on the top of ice cream. And yes….the juice left over is good, too ๐

Curious does the cooking and processing cook the alcohol out so kids can eat.
Susan says
I am not sure about that, so I make a few jars without the Amaretto for families with children.

So you don’t pit the cherries? I just want to make sure. ๐
oppie7802 says
Doh! Nevermind… just re-read the ingredients. Yes… pitted cherries.

Did you use pint or quart sized jars?
Mavis Butterfield says
