This is one of my husband’s favorite things to find packed in his lunch. Lucky for him I have a junk ton of carrots and this recipe is easy peasy! Seriously. It only calls for 3 ingredients and only has like 2 steps! Love it.
Instructions
5 medium carrots
1/4 cup raisins
1/4 cup mayonnaise
Directions
Wash and grate carrots {I used a cheese grater but you can throw the carrots in a food processor if you want}. Add raisins and mayo and mix until combined. Serve chilled. *Sprinkle with a little parsley if you’ve got it.

Mama made the same recipe, well, the same three ingredients. I love this with drained crushed pineapple or drained pineapple tidbits in it. And, I use Miracle Whip. Now, I want to make this right now.

This is like a national salad here in Finland. Every school has this on their menu about once a week. (our school system has free lunch for every student, everywhere)

I’ve made this and I don’t like it with raisins. I add chopped fresh garlic instead, but not in the same quantities as the raisins… Then it’s perfect for my taste buds!

Add some broken walnuts, too! – They add a nice texture if you’ve left out the raisins.

This is a keeper! I made it once and am super excited to make it again tomorrow night. One thing I will add is that if you have the time to make it the night beforehand you totally should. The flavors really shine the next day.
