To say that I LOVE quiche, {or anything that comes tucked into a homemade pie crust} would be a huge understatement. Quiches are so forgiving. You can practically add anything to them and they’ll still turn out great.
I whipped up this recipe for chicken and bacon quiche using the ingredients I had on hand at the time. And you know what? It’s my new favorite recipe. Perfect for breakfast, lunch AND dinner. 😉
Ingredients
6 slices bacon, cooked and chopped
1 cup chicken, cooked, shredded and chopped
1/2 cup sweet pepper, chopped
1/2 cup frozen diced potatoes
5 eggs
1 cup milk {I used 2%}
1/2 cup cheddar cheese, shredded
2 teaspoons dried thyme
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon pepper
1 Pie Crust {my favorite pie crust recipe}
Directions
Preheat oven to 375ºF.
Place bacon, red peppers, potatoes, chicken and cheese in the bottom of a 9″ pie crust. In a large bowl, mix together the eggs, milk, pepper, salt, thyme and oregano. Pour the egg mixture into the pie crust over the bacon and other ingredients. Bake for 40-50 minutes or until a knife inserted near the center comes out clean.
Cool slightly, and serve.
