I picked up a few cans of chickpeas last week at QFC and thought I would make a chickpea salad for lunch today. I used some of the homegrown mesclun greens I planted a few weeks ago.
I sure miss having salads to eat all the time, but hopefully we will be able to get a few flats started in the greenhouse here pretty soon. If you don’t have any lettuce on hand, don’t worry about it, the chickpeas are delicious enough on their own.
Ingredients
4 oz mesclun salad mix
2 {15 oz} cans chick peas, drained, rinsed
1/2 red onion, chopped
3 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons lime juice {I used bottled}
1 teaspoon ground cumin
1 teaspoon dried cilantro {or 1 tablespoon fresh}
1/2 teaspoon dried parsley {or 1 1/2 teaspoons fresh}
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
Directions
Place all the ingredients but the lettuce in a bowl and toss until well combined. Place chickpea mixture in the refrigerator for about 2 hours, so the flavors can mingle and then serve over a bed of fresh lettuce greens.

Hi Mavis: I too look forward to reading your blog every day. You challenge me through the challenges you set for yourself. I decided to take on the “buy no groceries for the month of April” challenge, and did it! In fact, I decided to continue it into May. So far in May, I did break down and order one Bountiful Basket of fresh fruits and vegetables. I LOVE fresh fruits and veges, so this to me was a necessity. I’m in Montana, starting a garden early must be done in a greenhouse because we can have frost for awhile. I was able to harvest my first lettuce for a delicious salad last week and look forward to many more vegetables as the season progresses.
Thanks for the chickpea salad recipe. I have all of the ingredients needed to make it for dinner this week, and I think my husband will love it as well. We have 2 homes in 2 states as well. It’s definitely a challenge keeping up with 2 homesteads, one in Washington and one in Montana. Have fun out East!
