I recently teamed up with Glad Food Protection to take the #SAVEITSUNDAY pledge to not only help eliminate food waste in my own kitchen, but to show you some cool and creative ways you can reduce food waste in yours.
What is the #SAVEITSUNDAY pledge?
Well basically it’s about loving food more and wasting it less, one day at a time. It’s a simple concept that can be implemented with baby steps. Take for instance the chain reaction of the Christmas cookies I made for friends and neighbors.
First, to make the actual cookies themselves I searched for a recipe using up ingredients I already had on hand. I used leftover pistachios that had been all but forgotten about and were taking up space in the back of my cupboard. Taking inventory of what you have and using up what’s on hand first before going out and buying more is a step in the right direction.
Next, I packaged the cookies in reusable Glad containers {cause I’m a housewife people, so I know how freakin awesome and useful Glad containers are!}. So while my hope is they gobble up every last crumb cause they think my cookies are da bomb diggity, they can wash and reuse the containers to store leftovers in the future; therefore contributing to waste reduction with one simple container choice.
Lastly, I chose to make cookies. Cookies are the perfect gift to give {and receive, hint, hint} during the holidays, because even though 40% of food goes to waste in America, cookies are not one of them. While I’m sure there are exceptions out there, cookies are something that NEVER go to waste around my house. Gifting them is a perfect way to ensure what I’m passing on will not become a statistic in that terrible 40%!
Here’s the recipe. If you like pistachios, it’s perfect in every way!
Ingredients
4 cups all-purpose flour
1 1/2 cups unsalted, shelled pistachios, finely chopped
1 1/2 teaspoons salt
1 1/2 cup unsalted butter, room temperature
1/2 cups cup brown sugar {Make your own brown sugar}
2 eggs
12 oz mini chocolate chips {I used semi-sweet}
Directions
Heat oven to 350 degrees .
In large bowl, beat the butter and sugar together for 2 minutes until nice and fluffy. Beat in the eggs.
Slowly mix in the flour, salt, mini chocolate chips and 1 1/2 cups of finely chopped pistachios. Mix until all ingredients are incorporated.
Using a 1 tablespoon cookie scoop drop dough balls 2 inches apart on to a lined baking sheet {I use a silpat}. Bake at 350 degrees for 12 minutes until firm and lightly browned.
Cool on a wire rack then store in an airtight container like GLADWARE.

Mavis, I am seeing two different 1 1/2 cup qtys of pistachios. One is finely chopped, the other rough… Are the rough chopped an error? Where do you add them? Otherwise, awesome! I should make some pantry cookies soon and use up the odds and ends.
