I can’t believe I’m saying this but I seriously think I’ve fallen off the cooking bandwagon. Is that even possible? Do you ever feel like you never try anything new? Well I’ve decided that this is the week I’m going to get my stuff together and try a few new recipes.
So if you have any old time favorites you think I should try, please, please, please leave me the recipe {or the link} in the comments. I need some new ideas.

I know how it is to get in a rut. Especially this time of year with no veges growing. I started making pizzas and am hooked. I can’t wait to do them this summer with roasted veges. I started with my canned tomatoes (2 jars) and made sauce with hot italian sausage. You don’t need alot of sausage a just a couple of them will flavor the whole batch. I found pizza dough at Winco . Quite inexpensive and got 4 pie tin size pizzas from one bag. You just press the dough in the tin,( I greased the tin a bit first ) Spread your sauce on and top with grated mozzerella and any other grated cheeses you may have in the fridge. I like to add thinly sliced mushrooms, green onions from the garden, olives, garlic, I like slicing up salami or pepperoni also and top with parmesean. Red pepper flakes and dip in homade ranch. There’s so may ways to top these, a great way to use up what you’ve got laying around in the fridge. I’m going to try a few different approaches this week just by adding some ricotta and a tomato jam that I made for canning. I like to try a little something new each time I make one. I just divide the dough into fourths and make one at a time. Each one is it’s own creation. I find them quite fun. They don’t take long to put together or bake. And you end up with a bomb pizza. They only take 25-30 min to bake, so quick, easy and tasty!
And you can experiment and add what ever you’d like. I’d love to hear how others put their pizzas together.

Chicken, Garlic and Roasted Pepper Pizza
1 9-inch pre baked pizza crust (I bake mine while I make the topping)
6 ounces cooked chicken breast, diced or shredded
1/3 cup thinly sliced onion
1/4 cup thinly sliced roasted red pepper
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon tomato paste
2/3 cup heavy cream
1/4 teaspoon red pepper flakes
Salt and pepper to taste
Cook onion in olive oil over medium high heat until tender and beginning to brown, 3-4 minutes. Add garlic and cook for 30 seconds. Add roasted red pepper and tomato paste and cook, stirring, for 1 minute. Add cream and pepper flakes and cook, stirring occasionally until thickened and slightly reduced. Remove from heat and fold in chicken and season to taste with salt and pepper. Spread mixture evenly over pizza crust. Allow to rest 5 minutes to set up before slicing.

This is our family’s favorite recipe. Filling and delicious! I usually use black beans, green bell pepper, and broccoli as substitutions when I don’t have the others on hand. You really should try it! It’s a delicious dish 🙂

My family calls this one the broccoli noodle stuff.
Sausage – 1 pound
Egg Noodles – 1 Bag
Broccoli – Fresh or Frozen
Corn- Fresh or Frozen
Parmasan Cheese
1. Start water for noodles in a big pot.
2. In a medium to large skillet brown the sausage.
3. When sausage is brown added in the frozen corn and turn off the heat.
4. When the noodles are almost done throw in the fresh or frozen broccoli till warmed through.
5. Drain noodles and broccoli, saving a bit of the cooking liquid. Place in with the sausage and corn.
6. Mix together and add a little of the cooking liquid to the pan to make “sauce”.
7. Grate Parmasan cheese on top if you like.
* The amount of broccoli and corn depends on how much of each ingredient you like. We tend to do a whole bag of corn and half a bag of broccoli.
* You can add whichever vegetables your family likes. Those are just the ones that our family likes.
*. Do not drain the fat from the sausage unless there is a ton of it. It helps create the “sauce”.
*. Sometimes we grate some Parmasan cheese over the top after everything is done. It tastes good without the cheese too.
