It’s been another unseasonably warm week and there is no way I’m tying myself down to long drawn out meals. If you are ready to spread your wings and get a little dirt under your fingernails too, here are some quick and easy recipe suggestions…
3 Breakfast Ideas
Pina Colada Smoothie – It’s never to early to start celebrating the weather with a little island inspired breakfast. {Pin it for Later}
Cranberry Coconut Breakfast Cookies – I know I said we didn’t want to be tied to the kitchen, but these are make and bake, then enjoy all week. It’s an hour of your time up front that frees you from having to make something every morning. {Pin it for Later}
Strawberry Almond Granola – Again, this is one of those upfront commitments that makes mornings easier. You can eat it with milk, or like the HH does, and stir it into your morning yogurt. {Pin it for Later}
4 Lunch Ideas and Dinner Ideas
Easy Slow Cooker Soups – Vegetable Soup with Beef – It’s sooooo nice to have a crock pot full of delicious soup after a long day. {Pin it for Later}
Creamy Avocado Pasta – This is easily one of my favorite pasta dishes. You can literally whip this up in the time it takes to boil noodles. {Pin it for Later}
Slow Cooker Mashed Potatoes with Bacon and Chives – I love to mashed potatoes this way, because it’s one less thing I have to prepare in the hour before dinner. Pair it with a simple grilled chicken and voila, you are done. {Pin it for Later}
Ritz Cracker Chicken – These are like chicken nuggets, only turned up a notch. Kids love ’em. {Pin it for Later}
Peach Cobbler with Canned Peaches – If you canned peaches {you can always buy canned peaches too}, this dessert is about as easy as it gets. {Pin it for Later}
Chocolate Crinkles – I got this recipe from a Martha Stewart cookbook several years ago, and they’ve become a often requested regular in our cookie rotation. {Pin it for Later}
Apple Cinnamon Oatmeal Cookies – Apples give these oatmeal cookies a whole new flavor. Plus, they freeze soooo well, so you can eat some now, and save some for a rainy day. {Pin it for Later}
Meatballs – My favorite thing about freezer meatballs is that you can make them however you want when you are ready–a little marinara for Italian, toss them into spaghetti, or give them a teriyaki glaze before you cook them and serve them with rice. {Pin it for Later}
Featured Canning Recipe
Meyer Lemon Marmalade – It’s time, my friends. It’s time. {Pin it for Later}

I have a question about your meal plan, I saw on your website you said you don’t really like to meal plan….So do you make your list of what you have ingredients for or might be craving and just keep it in the kitchen to cook what you feel like each day, or do you specify a day of the week you will cook each item ? After several years of menu planning, I am feeling like my very specific menu planning is driving my kids nuts !

In looking at your pantry posts and recipes, I thought you might like this recipe, too – Portuguese bean soup. I had it at Christmas while in Hawaii one year, and it was by far the best bean soup ever! As written, it makes about 20 servings, but should be easy to cut in half. It’s soup, after all! And most of the items you probably have in your pantry or freezer already. If you can’t find the Portuguese sausage, you can probably substitute kielbasa – the spice palate is similar, though I find the Portuguese sausage a bit zippier (also fries up fabulously for breakfast!). http://www.hawaiimagazine.com/blogs/hawaii_today/2011/10/18/chef_favorite_ahi_poke_Portuguese_bean_soup_recipes
