I’m taking the week off from cooking this week but that doesn’t mean you have too. 😉 Check out the recipes below for some of my all time favorite easy weeknight meals. HUSBAND… are you reading this? You can do it!
3 Breakfast Ideas
Popovers -I almost guarantee you have everything you need to make a batch of these in your pantry/fridge. We like to slather them with jam or jelly for a quick breakfast. {Pin it for Later}
Leftover Ham Scramble – Since we have been eating a lot of eggs around here lately, I thought it was time to spice things up a bit and start tossing extras into our eggs. Even if you don’t have leftover ham, consider dicing up sliced turkey or roast beef–they both would be tasty too. {Pin it for Later}
Oatmeal Waffles – Once you make these, you’ll wonder why you ever bought waffle mix again. They are soooo simple and healthy to boot. {Pin it for Later}
4 Lunch Ideas and Dinner Ideas
Mongolian Beef Stir Fry – I love stir fries because the sides and the meal all get tossed into one easy dish. The fact that they are delish doesn’t hurt either. {Pin it for Later}
Black Bean Salsa with Corn and Avocados – Okay, I know what your thinking: “this is not a meal.” But it really can be. Put this stuff into tortillas or make yourself a taco salad out of it. We’ve been known to have chips and salsa for dinner around here too. {Pin it for Later}
Shepard’s Pie – I pretty much think anything topped with mashed potatoes is divine. {Pin it for Later}
Lentil Soup with Spinach – This soup is ridiculously filling–and packed with nutrients. {Pin it for Later}
3 Sweet Treats
Popcorn in a Bag– Okay, so not exactly a sweet treat–but sometimes salty is better. This is literally the easiest after school snack ever, and you don’t have to worry about any nasty chemicals. {Pin it for Later}
Basketball Rice Krispie Treats – Basketball season is in full swing {I know, because every time I go somewhere with a waiting room and cable, it’s on. So, if you have a sports fan in your life, you can wow them by tossing one of these into his/her lunch. {Pin it for Later}
Old Fashioned Apple Crisp – I love fruit crisps. In my mind, I could make a case for them being a breakfast food, but in the interest of non-judgement, I’ve decided to just make it a dessert suggestion. {Pin it for Later}
Featured Freezer Meal Recipe
Egg and Cheese English Muffins – I love to whip these up after a quick trip to a bread outlet store. They are like egg Mc’muffins, without the mc’nasty stuffins in them. {Pin it for Later}
Featured Canning Recipe
Blueberry Jam with Mint – If you are trying to decide what to can this year and want something that is just a little bit different than your standard fare, put this jam into the rotation. The blueberries and mint combo is unbelievable. {Pin it for Later}
What are YOU planning on making this week?
