I would say this salad is geared towards the kids, but then I had a scoop and I take that back. This salad was made for me. Just me. If you need me, I’ll be hiding under the kids table eating it this Thanksgiving.
Ingredients
1 can {20 oz} crushed pineapple, drained
2 {12 oz} packages of fresh cranberries
1 cup sugar
1 cup chopped pecans
1 cup sweetened shredded coconut
1 pint heavy whipping cream {8 ounces of Cool Whip works too!}
5 ounces miniature marshmallows
Directions
Coarsely chop the cranberries in a food processor. In a non-metal bowl, toss cranberries in sugar and refrigerate, covered, for 12 hours.
Add the pineapple, coconut and nuts to the cranberries, and toss well. Whip the cream until stiff and then fold into the cranberry mixture. Add marshmallows and refrigerate until ready to serve. Enjoy!

Yes! It’s one of those things we make a couple of days ahead.
We always make extra at thanksgiving-time and freeze it for Christmas-time. (Some of us have even been know to eat it frozen, unable to wait for thawing!) Yummmmm. ๐

My kids call this ‘cranberry dope’ but we make it without the pecans and coconut. The real name is Cranberry Ambrosia or something like that.

Growing up we made something very similar to this. We called it 5-cup salad and my mom used to let me be in charge of making it!
1 cup sour cream
1 cup coconut
1 cup mini marshmallows
1 cup mandarin oranges
1 cup pineapple
Mix it up and you’re good to go!

My Aunt gave me a similar recipe 30 years ago that I make for Thanksgiving and Christmas. Hers didn’t have pineapple or coconut. It had the other ingredients but with red grapes and marshmallows. In my book it Has to have real whip cream not cool whip. I can eat the whole thing myself it is soooo good.

I tried using Splenda in my fresh cranberry relish recipe. It didn”t allow the fruit to make any juice nor did the flavors ‘marry’…..I decided to stick with real sugar. Not sure how the newer substitutes would work.
