I was making may way through the Crock Pot Recipe Book Monkey Boy gave me for Christmas last year when I saw this recipe. Tart apples in pot roast? I was intrigued. So I gave it a try and adapted it a bit using what I had on hand. The addition of the apples is sheer genius I tell ya. Have you ever used apples in your beef dishes before? What about cinnamon? It’s amazing how savory it turned out using such sweet ingredients. Smash hit for the whole fam. It’s going on our “must make again” list or the HH might protest.
2 pounds boneless roast, cut into 2″ chunks
2 sweet potatoes, peeled and chopped
2 tart apples, peeled, cored and sliced
1 large onion, sliced
1/2 cup beef broth
3 cloves garlic, minced
1 teaspoon salt
1 teaspoon dried thyme
3/4 teaspoon black pepper
1 tablespoon cornstarch
1/4 teaspoon cinnamon
Directions
Toss everything but the cornstarch and cinnamon in the crock pot and cook on low for 8 hours.
Turn off heat, remove everything but the liquid into a serving dish. Whisk cornstarch and cinnamon into remaining juices in the crock pot until thickened {about 5 minutes}. Pour juices over pot roast and serve.

Sounds yummy.
Sometime try sliced polish sausage, chopped potatoes, onions and apples. Yummo. Cover and bake until potatoes are cooked.

One of my favorite fall recipes is Japanese Curry Rice, you add an apple to the stew and it’s amazing.
