It’s simple. It’s refreshing. It’s the perfect summer salad. If you grow cucumbers in your garden, this is a perfect way to use them up. It also makes for a perfect light side dish for any BBQ. It compliments any grilled meat really well. But I also like to sneak a bite or two anytime I pass the fridge! We loved it. Hope you do too.
Ingredients
2 large cucumbers, thinly sliced
1 large onion, thinly sliced
1 teaspoon dried dill {can use fresh dill if you have it!}
3 tablespoons white vinegar
3 tablespoons vegetable oil
Salt and pepper to taste
Directions
Place first 3 ingredients in a large bowl. Toss with vinegar and oil. Season with salt and pepper. Boom. Easy as that. Enjoy!

Yum! We make a similar Romanian salad with tomatoes, cucumber, onions, white vinegar and olive oil. Sometimes I add a little crumbled feta. You’re right, they are so delicious, especially after they’ve sat in the fridge for awhile and the flavors develop.

i like to add a little sesame seed oil and siracha (leave out the dill too) and make them slightly spicy. Works for tomatoes, zucchini and I would imagine squash too.
