There is nothing better than stew on a cold fall day, and this one is my new favorite. Have you ever added apples to your stew? This was my first time but it won’t be my last. This was unlike any stew I’ve ever made, and my whole family kept refilling their bowls. This is going in my permanent recipe book!
Ingredients
2 pounds beef stew, cut into 1 inch chunks {trim fat if necessary}
3 tart cooking apples, peeled, cored and chopped {I used Granny Smith apples}
2 tablespoons olive oil
1 onion, cut into thin slices
1 teaspoon curry powder
4 cups chicken broth
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
3 carrots, chopped
1 acorn squash, peeled, seeded, and cubed {2 cups}
1 tablespoon fresh parsley for garnish
Directions
Over medium-high heat, add oil to a Dutch oven. Add the beef chunks in a single layer, and brown on all sides {I did 2 rounds to get them all browned}. Return all beef to pan and add apples, onion, and curry powder. Cook for 2 minutes, stirring constantly. Add broth, and salt and pepper. Bring to a boil, reduce heat and simmer, covered, for 30 minutes, stirring occasionally.
Add carrots and return to a boil. Reduce heat and simmer, covered, for 20 minutes, stirring occasionally. Add squash to pan. Cover and cook an additional 10 minutes or until vegetables are tender. Garnish with parsley and serve.

Try adding some coconut milk to the mix…my oldest son did this to a similar recipe and it was a nice change.

apples really? how do the apples taste cooked in the stew? are they still tart or do they absorb the stew flavors and take on a new flavor? i’m intrigued… thanks!

This looks like a dandy recipe! Beef and I don’t always get along, but I’m guessing this would be excellent with pork, possibly with part apple juice/part broth, although I would try it with the broth first. I get good deals on pork carnitas at our near by Waremart, too, as compared to sky high beef prices–even better! Thanks for sharing!
