The Girl and I are having an absolute blast working our way through Shalane Flanagan’s cookbook Run Fast Eat Slow and eating all the results in the process. We haven’t made a recipe yet we didn’t like. We whipped up a batch of her date power bites a few weeks ago and let me tell you Bob, they didn’t disappoint.
So if you’re looking for something delicious to tide you over until dinnertime, or a quick snack on the go, these date power bites are perfect to pop in your mouth. We loved them. I hope you do too.
Ingredients:
12 large dates
1 cup dried cranberries
1 cup raw chopped walnuts
1/4 cup unsalted peanut butter
1 tablespoon unsweetened cocoa powder
2 tablespoons finely ground coffee beans
1/4 teaspoon sea salt
1/2 cup shredded unsweetened dried coconut
Directions:
In a food processor or blender, blend together the dates, cranberries, walnuts, peanut butter, cocoa powder, coffee, and sea salt. Pulse a couple times to blend the ingredients and then blend for 1 to 2 minutes until everything is finely ground. Blend until the ingredients clump together.
Empty contents into a small bowl and using your hands, shape the mixture into tablespoon sized balls. Roll the date balls in unsweetened coconut and then store in an airtight container for up to 1 month or pop them in the freezer for up to 6 months.

This sounded like a recipe I would like until I read ‘coffee beans’. I don’t drink or like the smell of coffee. Do you think they will turn out as good without the coffee beans?

I have not tried it without coffee beans so I’m not sure.
