I normally don’t have cake mix on hand but when I do and I need a quick cookie, I like to whip up a batch of these. They make the chewiest, fudgiest, most delicious cookie! You can play with the ingredients by switching up what kind of chocolate chips you use. I once added peanut butter chips and it was a whole new ball game. Plus, nuts are a fun addition, but they taste equally as awesome without them! Here’s how you make ’em:
Ingredients
1 box Devil’s Food cake mix
1⁄2 cup vegetable oil
2 large eggs
1 cup chocolate chips {milk, white or semi-sweet work great}
1⁄2 cup pecans {optional}
Directions
In a large mixing bowl or stand mixer, combine the cake mix, eggs and oil until well blended. Stir in the chocolate chips and nuts. Form into balls and place on a cookie sheet lined with parchment paper.
Bake at 350F for 10-12 minutes. Do not over cook. They’ll still look gooey even though they are done. Let cool a bit before serving. Enjoy!
