I’m not sure why I always wait to make this cake until December every year, because we have applesauce in our house year round. Maybe it has something to do with the smell of cinnamon, cloves and allspice baking in the oven. It’s like the that particular combination of spices can only be used around the holidays or something. It’s kind of weird.
Anyway, everyone in my family loves this cake, and the HH and I have been known to enjoy a slice {or two} with our coffee {him} and tea {me} in the morning.
We love this recipe, and I hope you do too.
Ingredients
2 cups all-purpose flour
1 teaspoon baking soda {15 Cool Uses for Baking Soda}
1 teaspoon cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon grated nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup unsalted butter {softened}
3 eggs
1/2 teaspoon vanilla extract
1 cup applesauce
1/4 cup of buttermilk {how to make buttermilk}
1 cup sugar
Directions
Preheat oven to 375 degrees.
Butter and flour an 8-in square baking pan and set aside.
In a medium bowl combined the flour, baking soda, cinnamon, allspice, nutmeg, cloves, and salt and set aside.
In a large mixing bowl beat together the eggs, butter, vanilla and sugar until nice and smooth. Mix in the applesauce and buttermilk, then add in the dry ingredients and mix again until everything is incorporated.
Pour the batter into your 8-inch prepared pan and bake at 375 for 25- 30 minutes or until a toothpick in the center comes out clean.
