These individual chicken pot pies are a snap! The Girl practically begs me to make chicken pot pies each week. When she asked what was for dinner tonight and I replied Chicky pot pies, she was one happy camper. For me, making dinner ahead of time is key. I like having it done and out of the way so when the HH calls to say he is on his way home, all I have to do is heat up the meal and we’re good to go. Being prepared makes dinner time less stressful for me, especially during fall sports season.
Ingredients
3 cooked chicken breasts, shredded
1 can of corn kernels, drained
2 medium potatoes, cooked and cut into chunks
1 jar Heinz chicken gravy {or homemade}
1 egg {for egg wash}
1 homemade double pie crust
salt and pepper to taste
Directions
In a large bowl combine chicken, corn, potato, gravy, salt and pepper and combine. Scoop mixture into individual pie plates* or large ramekins*. Cover with pie crust and brush an egg wash over the top. Bake at 350 until gravy bubbles and pie crust tops are a nice golden brown {about 30-45 minutes}. Cool slightly and serve. Yield 4 servings.

How do you make the homemade chicken gravy? This recipe looks great.

Melissa, here’s how I do it:
Melt 1-2 T butter in a pot. Add 1-2 T flour (depends on how thick you like your gravy). Slowly pour in 1 cup of chicken stock all the while vigorously whisking to prevent lumps from forming. Bring to a boil while stirring and then remove from heat. And there’s your gravy!

We had crock pot pork backbones (from a local farm) with homemade molasses bbq sauce and baked potatoes. Currently enjoying a glass of wine now that the little one is in bed and hopefully a shrimp cocktail will follow! ๐ Pot pie sounds amazing and is on my to do list – just trying to make sure I can squeeze it in around my reclaimed produce!

So can you have an unlimited number of chickens then? Here (well in town) they allow 4. Everybody says that their chickens are their family pets. But what happens when those 4 hens stop laying, probably all about the same time (because the chicks were all bought at the same time) and then you just have 4 pets? And you can’t get more unless you get rid of those other 4? Nobody has an answer.

Thank you for the inspiration. Turned this into a casserole with mashed potato topping instead of pastry (gluten free eating son). Absolutely delish! Gluten free gravy was made with 1 can Swanson’s chicken broth and 1 tblsp of rice flour.
