The other night I made cranberry chicken salad sandwiches and Dijon potato salad with green onions for dinner. I pretty much LOVE anything sort of meal I can make ahead of time. I don’t know about you, but the last thing I want to do is try and figure out what to make for dinner at the last minute. Because when that happens, we usually end up eating cereal for dinner. Ha!
If you have never tried chicken salad with cranberries before, it delicious. Trust me.
Ingredients
2 chicken breasts, cooked and shredded
3/4 cup dried cranberries {Traverse Bay* are my favorite}
1/3 cup mayonnaise
1 celery rib, sliced thin
1 green onion, chopped
2 tablespoons white wine vinegar
1 teaspoon dried tarragon
salt and pepper to taste
Directions
Place all the ingredients in a bowl, mix them up and serve on a bed of lettuce, with 2 slices of toasted bread as a sandwich or on it’s own.

Try adding pecans, walnuts or almonds. it adds a wonderful crunch to the chicken salad.

Try adding drained crushed pineapple to the chicken salad. Awesome
