If Monkey Boy and The Girl Who Thinks She’s a Bird had it their way, we’d be eating chicken, turkey, or beef pot pie every night for dinner. Pot pie, without a doubt is the most requested dinner around here. Once you get the hang of making a pot pie, it’s super easy and you’ll be able to whip them out in no time at all.
Comfort food rules. No matter how you slice it.
Ingredients
1 pound left over pot roast, cubed
2 carrots, chopped
4 potatoes, chopped
1 onion, chopped
2 tbs Olive Oil
2 tea. Italian seasoning
2 bottles Heinz Gravy {or use 3 cups of homemade}
1 pie crust
1 egg
Directions
Preheat oven to 350 degrees.
Butter a 9×13 casserole dish and set aside. In a frying pan saute carrots, onions and potatoes in olive oil until softened. In a large mixing bowl combine leftover pot roast, vegetables, gravy, seasonings and combine. Pour filling into buttered dish. Cover filling with a pie crust and crimp the edges. Brush the top of pie crust with egg wash. Bake at 350 degrees for about 40 minutes or until the gravy filling is bubbling and the crust is golden brown. Cool slightly and serve warm with biscuits.
