Yesterday I made a batch of homemade chicken noodle soup in the crock pot. Sure I had to beg some carrots and 2 stalks of celery off of Girly Girl to make it, but man was it good.
I used to think Crock Pot meals were for busy days when there was no time to cook. But apparently not. Rolling out of bed at noon to toss a few ingredients in your crock pot then heading back to bed is totally acceptable.
And tasty too.
I present… Chicken Noodle Soup. Enjoy!
Ingredients
8 cups chicken broth
3 chicken breasts {I used boneless, skinless, frozen ones}
2 cups carrots, chopped
1 cup celery, chopped
1 medium onion, chopped
3 garlic cloves, minced
1 bay leaf
1 teaspoon dried thyme
1 teaspoon Tapatio hot sauce {the HH loves this stuff!}
2-3 teaspoons salt
1 teaspoon fresh ground pepper
1/2 teaspoon chili powder
8 oz egg noodles, uncooked {I used No Yolks brand}
Directions
Toss all ingredients EXCEPT the egg noodles in a 6 quart crock pot, stir, and cook on low for 8 hours or high for 4 hours.
When the soup has finished cooking, remove the bay leaf and discard.Β Shred the chicken meat with a fork in the crock pot, add noodles, and cook soup {with noodles} for an additional 20 minutes.
Serve with a crusty chunk of bread.

Love it! Tapatio is the only hot sauce I bother to buy as my hubs loves it too. I will try replacing those little hot chili seeds with it next go around. Thanks for the tip.

Did you make the chicken broth? I usually make my own with chicken frames, spices, and left over veggie peelings. This turns out to be very good, free, and healthy for you. My kids and husband love chicken noodle soup that is homemade. Can’t beat it!

I just made this soup; it is by far the BEST chicken noodle soup ever. CNS is my standby when I come down with some sort of bug, like now, and I have to say, it warms me in so many different ways. Would never have thought to add the chili powder but it gives it enough kick to be interesting without over powering our little sissy taste buds … lol.

I would probably cut it back to 6 cups of broth. π

This recipe was really good. Unless you’re a big fan of thyme, go ahead with the one tsp. If not, I suggest to only go with a pinch. Dried thyme is a very powerful spice. A+ to this recipe!

I was just thinking that when I am in Chicago this December visiting my son’s apartment, I may make freezer ziploc gallon size bags full of all of the ingredients for the soup (except the noodles) and then he can take it out and defrost overnight in fridge and toss in crockpot without having to do any prep. Who knows, if it cooks a little more like 10 hours he could probably do it completely from frozen, though it would have the chicken under temp for longer. What do you think?
I am really hoping to get 20 meals or so in his freezer that he can use for winter and spring quarter meals. Definitely doing a few of your lasagnas. Wish I had more than one day at his place to be cooking!
