I know I’ve had almost a month to recover, but I’m still a bit hungover from all the Christmas crapity crap I ate. I think I jacked up my metabolism because I find myself constantly wanting to snack and never on good healthy foods! So I needed a healthy recipe right at my fingertips to shove in my mouth when I get the munchies.
These almonds were perfect! And so good I want to marry them.
Ingredients
2 tablespoons melted butter
1 tablespoon curry powder
1/2 teaspoon seasoning salt
1 lb blanched almonds
Directions
Mix butter, curry and seasoned salt. Pour mix over the almonds in crock pot and toss to coat well. Cover and cook on low for 2 to 3 hours. Turn to high, uncover pot, mix and then continue cooking for about another hour.

Sounds great but I don’t want to buy a Crock Pot to make them … perhaps a pressure cooker would do the same???? Or perhaps bake in the oven on a cookie sheet???? Alternate cooking methods would be useful…Thanks.

Tim, I was just adding to my Crock Pot series so that is why I didn’t list alternative methods. But cooking on a cookie sheet in the oven would absolutely work!
