Awhile back I bartered with my neighbor Francisco and one of the items we traded was a can of cream of mushroom soup. In all my life I think I have purchased maybe 2 cans of cream of mushroom soup, so I wasn’t exactly sure what to do with it.
Then I looked in one of my favorite cookbooks Fix-It And Forget and found a recipe for mushroom chicken. Everyone loved it. Even me, and I don’t really care for mushrooms. I don’t know about you, but I LOVE my crock pot.
Here is the recipe:
Ingredients
4 boneless, skinless chicken breasts
1 {10 1/2 oz} can Cream of Mushroom Soup
1 {7 oz} can sliced mushrooms, drained
1/4 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
Place chicken in the bottom of a crock pot, and add salt and pepper. Pour chicken broth, cream of mushroom soup over the chicken and then pour the mushrooms over the top. Cook on low for 6 hours or high for 3-4 hours.
Serve with rice or your favorite vegetables.

Mildred: Hi – I’m three years older than you and I love Mavis, too!! We might not be able to keep up with her, but isn’t it a hoot to try??? I enjoy what so many young women are doing today. I just wish I could find a Grocer Guy for free produce!

nice meeting u here, Shirley. Yes, I love to try to keep up w/ Mavis. I run in here , read what she is doing , then run back out and try to do some of her things. I had 2 rabbits but they were more than I could keep up w/ and gave them away but had lots of poop for my container pots.

Hi Mildred, I live in the the Pacific NW near Seattle. I live in an apt without even a patio or deck which was a huge mistake. If I get the opportunity, I will move to where I can at least do container gardening. I check out my stores cheap-ready-for-discard fruits & veg & do try the recipes. My goal this month is to make a different crockpot soup each week. Two servings for me that week and three for the freezer. I’m also going to make the No-Knead bread. Lots of bananas in the freezer for banana bread. Sorry you had to find new home/s for your rabbits.

I like your idea of crock pot meal and freezing some of the meals and will try also. I do the one pot meals also and use sandwich containers to dish out my meals for the week. I do not like to cook. It was time for my rabbits to go. I thought that I would have one litter but come to find out I had 2 females. lol
I just received my order of Myer lemon tree after reading Mavis’s blog and have it in the living room so I can enjoy. This is my first week w/ it and now it has 2 beatiful blooms.
Are u able to have a few herbs in your kitchen? Right now I am trying to down size the flowers to upsize the vegs… grins.

Try the same recipie but use a roast or london broil and add a package of dry lipton onion soup mix right on top before you close the lid. (can also use beef or onion soup instead of the chicken soup) YUMMMM-O!

Ok, I recently tried a recipe out of desperation, and we were all shocked at how good it was.
4 boneless skinless chicken breasts
1 15 oz. can black beans
1 15 oz. can corn, or use frozen instead, or even fresh
1 cup salsa – I used Pace
8 oz. cream cheese
Throw everything EXCEPT THE CREAM CHEESE in a crockpot. Cook 4 hours on high or 5-6 hours on low. Cube block of cream cheese. Shut off crockpot, and mix in the cubed cream cheese. Serve over rice. Top with cilantro or parsley if you like.
This was shockingly good, and I even forgot the cream cheese once and it was good.

Have you tried freezing the leftovers? I’m curious if that is an option for routines like mine, where I cook in bulk and freeze in portions.

I like to wrap the chicken with a couple rinsed slices of “dried beef” (its in a glass container with a blue top, a lot of people eat it when camping I think… or making chipped beef) when I make a recipe similar to this. My co-worker called it “Company Chicken” because its not that great for you so you only eat it when company comes over. But its a delicious hearty meal, now I know what’s for dinner.
