Sometimes I think we forget just how easy dinner can be. Yesterday I tossed a few ingredients into my crock pot, turned it on high and walked away. When I came back four hours later after working in the yard all afternoon, I had a delicious soup waiting for me. I don’t think I’ve ever spent less than 5 minutes on such a satisfying meal. Soup. It’s what’s for dinner. 😉
Ingredients
4 cups chicken or vegetable broth
1 cup dried navy beans
1 onion, diced
1 cup spinach {tightly packed}, chopped
1 cup ham, chopped
1/2 teaspoon Italian seasoning
Salt, pepper, garlic powder to taste
Directions
Toss everything into the crockpot and cook on high for 4 hours. Serve warm with a nice chunk of bread. This recipe makes 3 servings.

One time I hade a bunch of smoked pork chops and decided to try those in navy beans…the flavor was wonderful! The smoked flavor came out into the beans and the chunks of pork were delicious in the beans.
