Normally I like to make my brownies from scratch, but if you have a box of brownie mix in your cupboard, these are about the easiest fancy brownies on the planet to make for a last minute dessert.
Ingredients
1 standard brownie mix {I used Pillsbury}
Cheesecake Mixture
8 ounces cream cheese, softened
1 large egg yolk
1/3 cup sugar
1/2 teaspoon pure vanilla extract
Directions
Prepare the brownie mix according to the package directions. Pour into a lined 9- inch square pan and set aside.
Using a mixer, whip combine the cheesecake mixture until creamy and smooth. Drop spoonfuls of cheesecake mixture {2 tablespoons at a time} over the brownie mixture in a pretty pattern {if you have OCD like me}. Then, using a butter knife bring out your inner artist and gently swirl the cream cheese on top of the brownie mixture.
Bake at 350 degrees for about 35-40 minutes, or until done.
Cool for about 30 minutes and then serve with a big, fat, scoop of vanilla ice cream.
Then promptly adjust your belt.

You forgot to add a “burp” to that (excuse me please). Oh and thanks for the bit about the kale…my sister has hers in her dehydrator as I am typing this. And we added some to chickpea crackers we made today. Awesome!

Friday before I left the office I stumbled upon some cooking blog I’d never been t before & found the most fabulously simple dessert recipe. Have you ever heard of the “10 Minute Lime Cracker Pie”?
OMG! One of those so silly easy recipes-high in fat of course-you can whip up in 10 min & you don’t even have to bake it!
2 – 14 oz. cans sweet.condsd milk
1 pint heavy cream
half a cup lime juice & 1 tbls. zest
Approx. 2 and a hlaf sleeves Ritz crackers
Wisk milk, heavy cream & lime juice in lrg. bowl-wisk about 1 min. til thickened.
Spread 1 c. filling on btmdeep dish pie plate or 11 in. casserole. Top with single layer Ritz.
Repeat layers. Finish with filling till all used. Sprinkle with lime zest.Refrig 2 hrs or better yet-overnight.

Anything that starts with two cans of sweetened condensed milk can’t be all that bad for you. Can I lick the lids? I love the thickened milk stuck to the lids.
