I know, I know. It’s another ground beef recipe. But I’m swimming in the stuff since I picked up all that ground beef last week {okay so the thought of swimming in ground beef is totally gross. Not like swimming in a pool of noodles Patch Adams style. Cause that would be awesome}. All swimming talk aside, this recipe is simple, tasty and easy to freeze. And then you can do a million different things with the meatballs: add them to spaghetti sauce, coat ’em in BBQ sauce, swim in them?! 😉
Easy Freezer Meatballs
Ingredients

- 2 1/2 lbs hamburger {Zaycon Beef 97% lean is what I used}
- 5 eggs , beaten
- 1 1/4 cups milk
- 1 1/4 cups grated Parmesan cheese
- 2 1/2 cups Italian breadcrumbs {or regular w/ added Italian seasonings}
- 6 crushed garlic cloves
- 2 small onions , finely diced {Ours were fresh so I included the green tops too!}
- 1 1/2 teaspoons oregano
- 1 1/2 teaspoons pepper
- 3 teaspoons salt

Preheat oven to 350.

Mix all ingredients together. Roll into golf ball sized meatballs {makes about 30}.

Bake for 30 minutes.

Let cool. Place in Ziploc freezer bags. To reheat simply microwave for 1-2 minutes until warm, or 15-20 minutes in a 350 degree oven.

You have onions but are there green onions in them? I see something green what is it?

I tried the recipe and I used scallions (I think this is what she uses) and it was delicious. These are the best meatballs I have ever had (made)

Randi, you can get the disposable cassarole trays at your local Dollar Tree Store or Dollar General or Dollar store! Some of them even come with covers!
One question for Mavis…when reading your recipes on freezing and then cooking, are you just taking them out of the freezer and popping them into the oven?? or are you having them thaw first?

I have to agree with the others…..THANK YOU for this recipe!!!! They are soooo good. My kids love them. I vacuum seal them in individual portions nd when I need to pack their lunches, I pull them out, add some veggies and fruit to their bento boxes and they’re good to go.

My kids love these. I actually use the onion, celery, carrot frozen mix in the recipe instead of just onions (the kids don’t complain about the extra veggies…) & my toddler snarfs these up! I usually serve them w extra Chunky veggie sauce and rotini & corn. Yum!!!
I’m making these up again for the kids over Christmas vacation. Need something easy & ready to go.
