Last week someone requested a recipe for fajita seasoning mix. So I found one, and decided to try it out. We made chicken fajitas with homemade tortillas and refried beans and, it was awesome. Who knew making your own spice blends could be so much fun?
Ingredients
1 tablespoon cornstarch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
3/4 teaspoon crushed chicken bouillon cube
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
Directions
Mix all the ingredients together in a small bowl and store in an airtight container until ready to use.

I used about a tablespoon per pound of meat.

Used this tonight in a pinch… no taco seasoning at home. Had everything but the cornstarch and chili powder. Added 1/4 cup or so of heavy cream. Browned a pound of beef, drained fat, added spice mixture and 1 cup of water and cream Brought to simmer until thickened. Perfect substitute.
