I’m always on the prowl for some good Christmas cookie recipes. This one jumped out at me because it had no flour, so I thought I’d give it a try. I don’t normally do flourless cookies, so I’m no expert on baking them, but they turned out amazing. So fudgy and chewy! They were a hit. Here’s how I made them:
Ingredients
2 1/4 cups powdered sugar
1/4 teaspoon salt
1 cup cocoa powder
3 X-large egg whites {or 4 regular}
2 teaspoons vanilla extract
2 cups chocolate chips {Ghirardelli are my favorite}
Line 2 baking sheets with a Silpat or parchment paper {do a quick spray with a non-stick spray on the parchment cause these are sticky little guys} and set aside.
In a large mixing bowl, whisk eggs with vanilla. In a separate bowl, mix the powdered sugar, salt and cocoa powder. Stir the wet and dry ingredients together, scraping the thick mixture from the sides. The batter might seem like a sticky mess. That means you’ve done it right! Stir in the chocolate chips.
Drop the about a teaspoon of the goopy batter at a time onto prepared baking sheets and let rest for about 30 minutes. Preheat the oven to 350F while they sit.
Bake the cookies for 7-10 minutes or until they’ve spread and have a crackly tops. Let cool and then serve. Enjoy!

I habe a recipie like that…has dried sour mont. Cherries in it too…I sometimes use dried cranberries…soooo good.

I made these a couple of months ago and they are fantastic! But, I think the recipe I used called for pecans too–though I could have made that up because I try to put pecans in everything! 🙂 Also, I threw in some salted caramel chips that my sister-in-law gave me when she was cleaning out her pantry to go vegan. Took them over the top! I highly recommend!
