I’m trying to plan ahead for breakfast this year because it always seems like I am running around the house in a temporary panic while I’m trying to get the kids off to school and freaking out because my son has not eaten his breakfast yet.
But not this year. I’ve been pre-planning and freezing breakfasts so I don’t have to worry about them! Check out how easy this breakfast sandwich is to prepare and freeze. Then the kids just pluck one out of the freezer and BAM, breakfast is served!
Ingredients
12 English muffins, split in half
12 eggs
3 Tbsp. butter or olive oil
12 slices American cheese
Salt and pepper to taste
(you can also throw on some cooked sausage patties or bacon, but I went meat-free this time)
Directions
Lightly toast the English muffins. Scramble the eggs in the oil or butter (you can also fry the eggs instead of scramble if you’d prefer). Salt and pepper to taste.
Place the cooked eggs and a slice of cheese between two of the toasted English muffins. Press firmly together to secure. Cool sandwiches in the refrigerator. When cool, wrap each sandwich in a paper towel and place in a heavy duty Ziploc freezer bag. Freeze.
To heat, slightly unwrap the paper towel and microwave on high for one to two minutes until the cheese is melted and the sandwich is hot.

I make egg/cheese/and bacon sandwiches all the time in the morning. What I do to cook the eggs is spray a bowl with pam and then whisk in the bowl microwave for a min. Check and then depending on what it looks like heat it for another 30-60 seconds. it comes out as one piece. it is round and fits the sandwich perfectly. I typically do a bagel. Do only one egg for things like English muffins or toast. I find it is a little bit easier. I put the top of the sandwich on the egg in the bowl tip upside down and then put the bottom on. That way the flat side is on the bottom and you don’t need extra tools to get it there. Of course it is easier doing one at a time. Making a dozen at a time may not be the case. Making them fresh to order this way; if you time everything right (bread, egg and bacon all coming out about the same time) The cheese melts perfectly on it’s own.

I LOVE freezer cooking and breakfast is one of the easiest to do!
Freeze extra pancakes and to reheat I put them in the toaster or toaster oven so they are not soggy. Same thing for waffles. Reheat in the hot waffle iron. No need to oil or anything – They come out crispy. French toast – same thing – reheat in toaster.
You can also put eggs/cheese in rolled tortilla shells, too. The different combinations are limitless. Add crumbled bacon or sausage – onions and green peppers, ham, mushrooms, etc. Delicious!!

I have super healthy waffle recipe I fix in Belgian waffle maker, then refrig or freeze left overs and pop 1/4 sections in the toaster.

I did a bunch of breakfast burritos for my girls this year. I wrapped them individually in coffee filters then froze them. Saves me so much time and grief. Lol. Your blog is my daily highlight! Love it. Thank you

Perfect timing on this one… I am having a hysterectomy in a few weeks and am searching for make ahead things to freeze so dh can pop in the oven. (I am more worried about my 7, 10, and 45 (husband) year old kids more than myself) any other freezer worthy meal ideas are much appreciated!!

I looooved this idea! I made them today after the first day of school with my teenage son went like this-Did you get some breakfast? No?!? It’s time to go! I don’t have time to make bacon and eggs, are you kidding?!
They are tucked in the freezer for tomorrow morning (I did add canadian bacon)

So cook you eggs in a coffee cup! Coat the cup with butter, break egg into cup and microwave for 30 seconds!

I may try a few of these so I have something decent before I go to work. I really like oatmeal, but that gets old. I really don’t want to have to wash breakfast pans every morning for just one personl.
