Once in awhile I’ll realize that things I’ve been doing for years could have been done just a tiny bit differently and saved me tons of time and money. Let’s take freezer pancakes for instance. The gist is this: you make pancakes, lots of pancakes, and you freeze them. I make pancakes all. the. time. So why haven’t I routinely made an extra batch since I’m spending the time to cook and dirty up my kitchen, make a bunch of extras and throw them in the freezer.
So that’s what I’ve been doing and let me tell you Bob, I’m in love. All we have to do now is pull a few out of the freezer, pop them in the microwave or toaster and breakfast is served. I freeze so many other things, I’m not sure why I haven’t done this forever.

Here’s how you do it:
Make 2 or 3 times the regular recipe {or more if that suits your fancy}. Let the pancakes cool a bit, bag them up and throw them in the freezer. Seriously. Your life just got easier.

I have been doing this for my two little boys and it makes mornings so much easier. I also so waffles. We find the toaster makes them less soggy. I even try to take them off the griddle a little earlier when I know they are going to be frozen so they don’t get too dry when reheating them. Your pumpkin waffles (minus the sugar) are one of our favorites!

Do they stick together? We love our pancakes here too, but eat them more at dinner than breakfast! My son probably wouldn’t eat them if they stuck together, he’s very weird about his food.

I’ve done this for years with pancakes and with waffles. Only I freeze them individually on a cookie sheet and then bag them up for the freezer. That way, NONE go to waste.

I do this too, but when I freeze them, I freeze them flat on a cookie sheet and then after they are frozen I put them in the baggie. That way they don’t stick together and I can pop just one or two out at a time.

Do you thaw them in the fridge overnight? Put them in a toaster or oven or just microwave them frozen? How long?
