I was over at my friend Jen’s the other day and she had just made a big batch of her famous fresh pineapple salsa. Wowie was this stuff good! Lucky for me {and you} she was willing to share the recipe.
Ingredients
½ pineapple, peeled, cored and diced {this pineapple corer works great!}
½ red onion, diced
1 papaya, diced
1 mango, diced
1 red chili pepper, diced
1 tablespoon cilantro, chopped
salt and pepper to taste
Directions
In a medium saucepan sauté the onions for a few minutes, add diced pineapple, mango and red chili and continue to sauté for another 1 – 2 minutes. Remove from heat, season with salt and pepper and stir in cilantro. Serve on a bed of lettuce.

I make a salsa just like this only I add avocado and some cumin too it. And it is fantastic!!!
