In a lot of ways, beans are like zucchini. When they grow, you better watch out or they will overtake your pantry, fridge, counter. Picking is never ending and so is the supply of green beans. So I’m always looking for simple ways to spice them up and make a side dish out of them. Bingo. This recipe was a hit. The pine nuts just really give it that extra awesome factor. One more delicious way to use up your green beans!
Ingredients
1 1/2 pounds green beans, ends trimmed
2 tablespoons olive oil
2 large cloves garlic, thinly sliced
1/3 cup pine nuts
1/2 teaspoon of kosher salt
1/4 teaspoon of pepper
Directions
In a large pot, bring water to a boil and then add green beans, cooking about 5 minutes or until tender. Drain beans and set aside. In a large pan over medium heat, heat oil and then add the garlic, cooking for 1 minute while stirring constantly. Add pine nuts and cook about 3 minutes or until golden brown, being careful not to overcook and burn. Stir in beans, salt and pepper, and toss until fully combined. Serve warm.
