The Girl and I love the movie My Big Fat Greek Wedding. So much! We re-watched it the other day and it totally got me in the mood for some Greek food. I had some kalamata olives in the fridge, so I decided to put them too good use and Greek it up for lunch.
These wraps were a total hit, but the recipe only makes two, so if you’re looking to feed more than a few people {or a few really hungry people}, double it!
Ingredients
1 large tomato, diced
1 cucumber, thinly sliced
6 kalamata olives, chopped
4 tablespoons feta cheese
3 tablespoons hummus
2 10-inch flour tortillas {I used spinach}
Directions
Spread tortillas out on flat surface and evenly spread hummus on the center. Then layer cucumber, tomato, feta and olives down the center of each tortilla. Roll up tightly. Cut each wrap diagonally in half to serve.
